Vegan MoFo #17: Baking Bread

Really Easy No Knead Bread
One of the things that I hoped to accomplish during Vegan MoFo was to make a loaf of bread from scratch for the first time. I did not include this in the list of goals in my first MoFo post because I was afraid that this would be the first to fall by the wayside. Well I proved myself wrong! I really have many other MoFo bloggers to thank for their inspiring bread posts, including Monica, Mihl, Panda, Amey, and Jennifer. In fact, it was a comment that I left on Monica's Quick Rye Bread post that finally led me to the bread that I would make. I asked for her recommendation of an easy, fool-proof bread recipe and she provided just that, complete with photos! This bread is so easy it practically makes itself, and no need for stonewear or enamel dutch ovens, I used a metal loaf pan with perfect results. Check out the comments section of this post for her instructions and photos.

Toast!

I am ready to try baking some more breads and I'd love your recommendations! What are your favorite bread recipes?

  4. Woohoo! Huzzah for bread! My friend swears by Peter Reinhart recipes (I think I spelled his name correctly). I have yet to try them though.

  6. kick booty, Sarah! that's one perfect loaf o' awesome you've got go'n on! WOW! i wish the first loaf of bread i made looked like yours. w00t!

i make a loaf of dave's killer whole wheat bread almost every week for dan's pb&j sammies. the recipe instructions call for a mixer and such, but i do it by hand and halve the recipe. works well every time and dan raves about it. he even tells me it's better than his momma's bread. :) http://www.everydaydish.tv/index.php?page=recipe&recipe=122

  7. Yum, fresh bread!!

This is the recipe I always use for a whole wheat loaf:

It couldn't be more easy and foolproof, and the texture is still nice and light despite the fact it's whole wheat! :)

  8. My husband just made a loaf of bread last night! It smelled so great, I don't eat gluten much so I haven't tasted it. The recipe is off of the Organic RIze yeast packet, he proofed it in the dehydrator. La Dolce Vegan has lots of vegan bread recipes, I've made the easy french bread in the past and it was great. SHe has recipes for both quick and yeast breads.

  11. I am ridiculously behind on blog reading so hopefully you've already found some bread recipes you like, but if not then here are a couple I really like: buttermilk honey bread (http://www.eatmedelicious.com/2009/12/buttermilk-honey-bread.html) and focaccia (http://www.eatmedelicious.com/2009/09/insanely-delicious-basic-focaccia.html).
