Vegan MoFo #14: Red Lentil-Cauliflower Curry



Just a quick post today to share one of my favorite recipes from one of my favorite cookbooks, Veganomicon. I come back again and again to the Red Lentil-Cauliflower Curry (page 186). This recipe transforms a head of cauliflower and a cup and a half of red lentils into a giant pot of creamy delicious curry. The lentils break down in the broth to create a thick, protein-packed sauce which coats the cauliflower florets. This is a great weeknight meal, which results in lots of tasty leftovers to pack for lunch at work. I cannot say enough good things about this recipe, or this cookbook for that matter!

  1. Veganomicon is such a great book, but I've never tried this. My lentil/cauliflower creations have largely been reserved for FatFreeVegan's Cauliflower Dal with Panch Phoran. But I must branch out now that you've recommended this.

  2. i'm kinda ashamed to say this, but i've only ever made maybe 3 or 4 recipes some v'con. i have no excuses, other than laziness and forgetfulness. that's one deeeeeelicious look'n curry, and it's been months and months and months since dan and i have enjoyed indian eatz. looks like i need to make it happen, and get reacquainted with the awesomeness that is veganomicon. w00t!

  3. There are so many recipes in Veganomicon that I love, I don't even know where to begin. The chickpea cutlets, hot sauce glazed tempeh, and seitan are my most used recipes. Oh, and I can't forget the S'mlove pie. It's to die for!

  4. We just made the lentil cauliflower curry last week - to. die. for. Like Kiersten said, there are too many "favorites" in Veganomicon to name just one, but I can say that I almost always have a container of the Caesar salad dressing in my fridge. It is so yumalicious!

  8. I love that recipe too. I'd say that my favorite recipes from veganomicon are the Leek and Bean Cassoulet, the Enchiladas, the Schmlove Pie, the Chickpea Cutlets of course, and I think I could go on and on!

  11. Though I cook a lot from Vegan with a Vengeance, I rarely cook from Veganomicon. I guess the recipes don't appeal to me as much. So I really appreciate you sharing this, now I'm going to try it! Some things I've made and really liked from it are the chickpea cutlets with mustard sauce (I'm sure you've made the cutlets), portobello salad with mustard dressing, and coconut lemon bundt cake (SOOOOOOO good).
